What better way to pump up the iron intake (and make hubby happy) on a hot summers night then a very fresh and tangy take on red meat. This salad ticks all the criteria, it’s light, healthy and the dressing is absolutely delicious.
Simple lime and beef noodle Salad
Adapted from a Donna Hay recipe
1 tablespoon pea nut oil
800g eye fillet steak sliced
1/2 cup sweet chilli sauce
1/2 cup lime juice
6 kafir lime leaves
8 spring onions
lime wedges to serve
300g rice noodles
2 Lebanese cucumbers sliced
1 small cos lettuce
4 stalks of celery finely sliced
Heat peanut oil in pan and cook beef for approximately 5 minutes or until liking. Set aside and prepare the dressing. In the same pan, pan fry the spring onions, chilli sauce, lime juice and lime leaves for 4 minutes and then pour over the beef.
To make the salad simply combine the lettuce, cucumber, celery and cooked noodles (cooked as per directions on the pack), then pour the beef and dressing mixture over the top.
